The Gateau Nantais with autumn apples!


What a delight and no gluten for this Nantais cake made of powdered almonds, or hazelnuts ....but butter!!!

 

            6 people / 20 min / 180° C

 

INGREDIENTS

  •             110 g powdered sugar (brown)
  •             125 g of semi-salted butter
  •             100 g powdered almonds or hazelnuts
  •             40 g flour (20g rice; 20g buckwheat)
  •             3 eggs
  •             1 pinch of salt
  •             3 or 4 apples from the garden!

 

RECIPE 

 

STEP 1

Preheat the oven to th.6 (180°C).

 

STEP 2

Whip your semi-salted butter to a creamy consistency. Then add the powdered sugar and 1 pinch of salt. Mix until you have a smooth mixture.

 

STEP 3

Next, add the almond/hazelnut powder, then whisk in the eggs one at a time while whisking your cake mixture. Sift your flour and add it to the rest of the mixture. Add the sprinkles. Mix again until you have a smooth cake batter.

 

STEP 4

Cut 3 or 4 peeled apples into small squares and fold them into the dough.

 

STEP 5

Butter your cake pan or line it with parchment paper. Pour in your cake batter and bake it for 20 minutes. Your cooking time depends on your oven, check by pricking the cake with a knife, it should not be overcooked because the paste is essentially based on almond powder! 

Once the cake is cooked, unmold your cake while keeping the bottom part up, this one was made with a flower mold that I love!

 

NB: You can also make it with chocolate chips, but we just picked up the 50kg of apples at the Yoga School Center, so here's to desserts!
